Elevate your sashimi by adding a refreshing daikon salad on the side.
Ingredients:
  • 40.00 ml tamari (see note)
  • 40.00 ml sake
  • 8.00 gm brown sugar
  • 2 tsp pickled ginger, thinly sliced
  • 2 green onions, ends trimmed, thinly sliced
  • 200g sashimi-grade salmon, thinly sliced
  • 1/2 daikon radish, peeled, cut into matchsticks
  • 1 carrot, peeled, cut into matchsticks
  • 1/4 white cabbage, finely shredded
  • 2 green onions, ends trimmed, thinly sliced lengthways, extra
  • 20.00 ml sushi rice vinegar
  • 3.00 gm toasted white sesame seeds
  • 3.00 gm toasted black sesame seeds
Instructions:
  • Mix together the tamari, sake, sugar, ginger, and green onions in a medium glass or ceramic bowl until the sugar is completely dissolved.
  • Combine the salmon into the mixture with a gentle stir.
  • Wrap in plastic and refrigerate for 30 minutes to allow the flavors to meld.
  • In a large bowl, mix together daikon, carrot, cabbage, and extra green onions. Drizzle sushi vinegar over the vegetables and toss gently to combine.
  • Evenly distribute the salmon mixture among the serving bowls, then sprinkle sesame seeds on top and gently mix to fully incorporate.
  • Spread the salmon mixture over the daikon salad and enjoy.
