Satay beef with tomato salad

Whip up a quick and delicious Asian-inspired meal, bursting with fresh flavors, ready in just 15 minutes!
Ingredients:
  • 27.60 gm vegetable oil
  • 500g beef stir-fry strips
  • 1 brown onion, halved, thinly sliced
  • 270ml can reduced-fat coconut milk
  • 130g (1/2 cup) peanut butter
  • 44.00 gm sweet chilli sauce
  • 21.00 gm soy sauce
  • 2 large tomatoes, cut into 1cm pieces
  • 1 Lebanese cucumber, trimmed, cut into 1cm pieces
  • 62.50 ml chopped fresh coriander
  • Steamed white rice, to serve
Instructions:
  • 1. Heat up your wok over high heat until it's smoking hot. Add 1 teaspoon of oil. Stir-fry one-third of the beef for about 1 minute until it's nicely browned. Transfer to a plate. Repeat this process with the remaining beef in 2 more batches, using another teaspoon of oil each time.
  • Heat the remaining oil in the wok over medium-high heat. Stir-fry the onion for 2 minutes until just soft. Add coconut milk, peanut butter, sweet chilli sauce, and soy sauce, then return the beef to the wok and toss until heated through.
  • Mix together fresh tomatoes, crisp cucumbers, and fragrant coriander. Spoon the rice into individual serving bowls and layer with savory beef and the tomato medley.
