"Elevate your meals with this superior homemade sauerkraut recipe that's simple to make and ready in just 3 days."
Ingredients:
  • 1.5kg green cabbage, cored, finely shredded, plus 1 extra large green leaf
  • 9.60 gm fine salt
  • 1 tsp caraway seeds
Instructions:
  • In a large bowl, mix all ingredients together. Massage cabbage with your hands until it wilts and releases its juices, about 5 minutes.
  • Transfer the shredded cabbage into a spacious 2L mason jar. Press down firmly to compact the cabbage, ensuring no air remains and that the cabbage is submerged in its own juices. Place a cabbage leaf on top to prevent floating pieces. Seal the jar and use weights to keep the cabbage leaf submerged. Cover the jar with a cloth secured by an elastic band. Allow the jar to sit in a cool spot for 3 days. Taste the sauerkraut to check for desired fermentation level. Store in the refrigerator and drain well before serving.
