Whip up delicious customizable breakfast cookies with sausage, egg, and cheese for a flavorful morning treat.
Ingredients:
  • 4 ounces breakfast sausage
  • 0.5 finely minced white onion
  • 0.75 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon freshly ground black pepper
  • 3 medium eggs, lightly beaten
  • 1 cup shredded Cheddar cheese, divided
  • 1 pinch freshly grated Parmesan cheese
  • 0.13 teaspoon dried parsley
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and prepare a large baking sheet by lining it with parchment paper.
  • In a non-stick skillet over medium heat, sauté the sausage until crumbly for 3 to 5 minutes. Add onion and continue cooking until sausage is no longer pink. Drain on a paper towel-lined plate for 3 to 5 minutes before serving.
  • In a large bowl, mix flour, baking powder, salt, pepper, Parmesan cheese, and parsley until well combined. Add eggs and whisk until incorporated. Stir in 3/4 cup Cheddar cheese until evenly distributed. Gently fold in the sausage mixture until a thick batter forms.
  • Take a 1/4 cup of the mixture and place it on the baking sheet. Top each 'cookie' with Cheddar cheese and gently press down with your fingers to slightly flatten.
  • Bake in the preheated oven for about 10 minutes until firm. If slightly soft, bake for an additional 2 minutes. Cool slightly before serving.
