Sausage and chickpea salad

Make this quick and delicious sausage chickpea salad for a crowd-pleasing meal.
Ingredients:
  • 500g pkt Italian Pork Sausages
  • 400g can chickpeas, rinsed, drained
  • 350g mixed medley tomatoes, halved
  • 2 x 60g pkts Baby Rocket
  • 190g jar basil pesto
Instructions:
  • Preheat a barbecue grill or chargrill over medium heat. Grill the sausages, turning occasionally, for 8-10 minutes until golden and fully cooked. Allow them to cool slightly, then slice them thickly on a diagonal.
  • In a large bowl, mix together sausage, chickpeas, tomato, rocket, and half of the pesto. Transfer to a serving platter and drizzle with the remaining pesto.
