Sausage and Kale Soup

Savory pork sausage enhances a medley of mushrooms, cauliflower, carrots, onions, and kale in flavorful chicken broth.
Ingredients:
  • 1 pound Italian sausage links, halved lengthwise
  • 2 large carrots, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup chopped portobello mushroom caps
  • 1 cup chopped cauliflower
  • 2 cups coarsely chopped kale
  • 1 bay leaf
  • 0.5 teaspoon oregano
Instructions:
  • Place sausages in a heated large pot and cook until golden brown on both sides, around 3 to 5 minutes per side. Transfer sausages to a cutting board to cool, keeping the flavorful sausage drippings in the pot.
  • In the same pan, sauté carrots and onion in the flavorful sausage drippings until the onion turns translucent, about 5 to 7 minutes. Add garlic to the carrot and onion mix, continue cooking and stirring for 10 to 15 seconds. Pour in chicken broth, bring to a boil, and deglaze the pan by scraping up the delicious browned bits with a wooden spoon.
  • Add sausages back to the broth with mushrooms, cauliflower, kale, bay leaf, and oregano. Stir well. Simmer on low heat until vegetables are just tender, about 15 minutes. Remove sausages, slice into 1-inch half-moons, then add back to the soup and simmer for another 5 minutes.
