Sausage and Pineapple Pizza

Ingredients:
  • 1 can (20 oz) pineapple tidbits
  • 1 lb bulk mild Italian pork sausage
  • 1 medium onion, chopped (1/2 cup)
  • 3 cups Original Bisquick™ mix
  • 2/3 cup very hot water
  • 2 tablespoons olive or vegetable oil
  • 1 can (15 oz) pizza sauce
  • 3 cups shredded mozzarella cheese (12 oz)
Instructions:
  • Preheat oven to 450°F with oven rack at the lowest position. Spray two 12-inch pizza pans with cooking spray. Drain pineapple and gently press between paper towels to remove excess moisture.
  • In a 10-inch skillet, sauté the sausage and onion over medium-high heat for 5 to 7 minutes, stirring occasionally, until the sausage is cooked through; then drain any excess fat.
  • Combine Bisquick mix, hot water, and oil in a large bowl, stirring with a fork until a soft dough forms. Beat vigorously for 20 strokes. Divide the dough in half and pat or press each half into a pizza pan using fingers dipped in Bisquick mix, pinching the edges to form a 1/2-inch rim.
  • Divide the pizza sauce evenly between the two crusts. Arrange the sausage and pineapple evenly on top of each pizza. Sprinkle 1 1/2 cups of cheese over each pizza.
  • Bake for 12-15 minutes until the crust is golden brown and the cheese is melted.
