Sausage brunch bap

Irresistible weekend brunch sandwich: savory sausage, golden mushrooms, creamy avocado, and a silky egg omelette in every bite.
Ingredients:
  • 1 higher-welfare pork or vegetarian sausage
  • 2 chestnut mushroom
  • ½ an avocado
  • ½ a lime
  • extra virgin olive oil
  • 1 brioche-style burger bun
  • chilli sauce to serve optional
  • 1 free-range egg
  • olive oil
  • 15 g Red Leicester or Cheddar cheese
Instructions:
  • Heat a large dry frying pan over medium-high heat. Score 1 higher-welfare pork (or vegetarian) sausage lengthways, remove the skin, shape into a patty, and cook in the pan for 2 minutes on each side. Add 2 chestnut mushrooms sliced to 1cm thick and cook until golden. In the meantime, destone and slice ½ an avocado, fan out the slices, squeeze ½ a lime, drizzle with olive oil, and add black pepper. Halve 1 brioche-style burger bun and toast in the pan. Spread the bun base with chilli sauce, if using, and top with the cooked sausage patty and mushrooms. Beat 1 egg in a bowl, wipe the pan clean, heat 1 tsp of olive oil, pour the egg, add Red Leicester or Cheddar cheese, fold into an omelette, and place on top of the mushrooms. Arrange the sliced avocado on top, drizzle with more chilli sauce, if desired, and top with the bun lid. Enjoy!
