Create a cozy winter feast with this delicious sausage casserole recipe.
Ingredients:
  • 8 thick beef sausages
  • 36.40 gm Classic Olive Oil
  • 44.40 gm Tomato Paste
  • 2 x 415g cans crushed tomatoes
  • 127.50 gm beef stock
  • 9.00 gm sugar
  • 40.00 ml fresh thyme leaves, plus extra to serve
  • 500.00 ml mashed potato, to serve
Instructions:
  • Heat a frying pan on medium heat until sizzling hot. Cook sausages for about 8 minutes until they turn a beautiful golden brown. Slice them thickly.
  • In a saucepan over medium heat, warm the oil. Introduce the onion and cook for 5 minutes, or until softened. Stir in the garlic and tomato paste, and cook for an additional minute.
  • Combine fresh juicy tomatoes, flavorful stock, and a hint of sweetness from sugar in a pot. Bring the mixture to a boil, then lower the heat to medium-low. Let it simmer gently for 20 minutes to develop rich flavors.
  • Stir in fresh thyme and sausage, cooking for 10 minutes or until sausage is heated through. Season generously with salt and pepper. Serve alongside creamy mashed potato and garnish with more thyme.
