Savory sausage casserole with eggs, potatoes, onions, cottage cheese, and Cheddar - a delicious breakfast bake loved by all!
Ingredients:
  • 1 pound sage flavored breakfast sausage
  • 3 cups shredded potatoes, drained and pressed
  • 0.25 cup butter, melted
  • 1 (16 ounce) container small curd cottage cheese
  • 12 ounces mild Cheddar cheese, shredded
  • 0.5 cup onion, shredded
  • 6 jumbo eggs
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • 1. Preheat a large, deep skillet over medium-high heat. Brown and crumble sausage in the skillet for 5 to 7 minutes. Remove excess grease.
  • Combine shredded potatoes and butter in the baking dish, gently pressing the mixture onto the bottom and sides. In a bowl, combine sausage, cottage cheese, Cheddar cheese, onion, and eggs, then pour over the potato mixture.
  • Bake in the hot oven until a toothpick inserted into the center comes out clean, for around 1 hour. Allow to cool for 5 minutes before serving.
