Savory mushroom caps filled with pork sausage, cheeses, onions, and sun-dried tomatoes - a delicious crowd favorite.
Ingredients:
  • 1 (9.6 ounce) package Jimmy Dean® Original Hearty Pork Sausage Crumbles
  • 2 cups shredded Italian cheese blend, divided
  • 0.5 cup ricotta cheese
  • 2 green onions, thinly sliced
  • 3 tablespoons finely chopped sun-dried tomatoes, rehydrated
  • 12 medium portobello mushroom caps
  • 3 tablespoons balsamic vinegar
Instructions:
  • Preheat your oven to 350 degrees F. Mix sausage, 1 cup of shredded cheese, ricotta cheese, onions, and tomatoes in a large bowl.
  • Drizzle oil over the mushroom caps and lay them top-side down in a shallow baking pan.
  • Cover the dish with the savory sausage mixture, then add a hint of vinegar for extra flavor. Finish by generously sprinkling the remaining shredded cheese on top.
  • Bake for 10-12 minutes until mushrooms are tender.
