Delectable vegan treat: sauteed figs with creamy cashew topping for a delightful dessert experience.
Ingredients:
  • 1 cup raw cashews
  • 1 cup soy milk
  • 1 tablespoon vanilla extract
  • 4 tablespoons agave nectar, or to taste
  • 2 tablespoons coconut oil
  • 1 pound fresh figs, halved
Instructions:
  • Place cashews in a bowl, cover with cold water, and soak for 2 hours to overnight. After soaking, drain the cashews.
  • Blend together soaked cashews, milk, vanilla extract, and agave nectar until creamy. Thin with water or soy milk as desired, then transfer the cashew cream to a serving bowl.
  • In a skillet over medium heat, warm coconut oil and saute figs on both sides until softened and heated through, around 4 minutes. Accompany with cashew cream.
