Buttery green side dish to pair with roasts or grills.
Ingredients:
  • 30g butter, chopped
  • 2 garlic cloves, crushed
  • 62.50 gm dry white wine
  • 1 large bunch English spinach, trimmed, washed
  • 42.50 gm sultanas
  • 40.00 ml pine nuts, toasted
Instructions:
  • In a large frying pan over medium heat, melt the butter until sizzling. Stir in the garlic and cook until golden, about 1 minute. Pour in the wine and simmer until reduced by half.
  • Place fresh spinach into the pan to lightly sauté for 2 minutes, or until it begins to wilt. Introduce sultanas and nuts, then season generously with salt and pepper. Toss everything together thoroughly before serving.
