Whip up a quick and flavorful sautéed spinach with garlic and olive oil - a nutritious side dish that even Popeye would love!
Ingredients:
  • 2 large bunches of spinach, about 1 pound
  • Extra virgin olive oil
  • 3 cloves garlic, sliced
  • Salt to taste
Instructions:
  • Prepare the spinach: Remove and discard the thick stems. Soak the spinach in water, ensuring it is free of any sand or dirt. Drain, repeat the soaking and draining process, then use a salad spinner to remove excess moisture.
  • In a large skillet over medium-high heat, sauté the garlic in 2 tablespoons of olive oil until just beginning to brown, about 30 seconds.
  • Place the spinach in the pan and gently press it down to fit. Use spatulas or tongs to flip and coat the spinach with the olive oil and garlic. Cover and cook for 1 minute, then uncover, flip the spinach, and cook for another minute.
  • After 2 minutes of covered cooking, until the spinach is completely wilted, remove it from heat and drain any excess liquid from the pan. Optionally, add a little more olive oil, then sprinkle with salt to taste. Serve immediately.
