Savory Bacon Scones

Savory bacon scones made with bacon grease for a delicious addition to breakfast or brunch.
Ingredients:
  • 0.5 pound bacon
  • 1.75 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking powder
  • 10 tablespoons whole milk
  • 2 teaspoons whole milk
  • 1 egg yolk
  • 0.125 teaspoon maple syrup
Instructions:
  • Cook bacon in a large skillet over medium-high heat until crispy and golden brown, about 10 minutes. Transfer bacon grease to a small glass container, chill for at least 1 hour until solid. Slice bacon into 1/4-inch pieces.
  • Preheat your oven to 400 degrees F (200 degrees C, gas mark 6) and prepare a baking sheet by lining it with parchment paper.
  • In a large bowl, mix flour and 1 tablespoon plus 1 teaspoon of baking powder. Add 6 tablespoons plus 2 teaspoons of chilled bacon grease. Use one hand to knead the grease into the flour mixture while turning the bowl with the other hand until the dough is crumbly.
  • Create a crater in the dough and gently drizzle in 10 tablespoons plus 2 teaspoons of milk. Knead with one hand until the milk is fully mixed in and the dough is moist. Shape the dough into a thick disc, then cut it into 16 uniform pieces using a knife.
  • Take the dough and shape it into balls, then arrange them on the baking sheet. Press them down into 2 1/2-inch circles. Put a tablespoon of bacon slices in the middle of 8 circles and cover each with another dough circle. Seal the edges by gently pressing with your fingertips.
  • In a bowl, combine egg yolk and maple syrup, then brush the mixture over the sides and top of each scone. Allow the scones to rest for approximately 15 minutes.
  • Bake in the oven until beautifully golden, about 12-15 minutes.
  • Lay a clean towel on a plate, then carefully transfer the scones onto the towel and fold it over to insulate and keep them warm.
