Cheese-filled pancake stuffed with mushrooms, spinach, and Canadian bacon - a tasty, versatile meal!
Ingredients:
  • 0.5 cup instant oatmeal
  • 0.25 cup cottage cheese
  • 0.5 cup egg whites
  • water, as needed
  • 1 clove garlic, minced
  • 0.5 teaspoon Italian seasoning
  • 1 dash cayenne pepper
  • salt and pepper to taste
  • olive oil cooking spray
  • 0.5 cup chopped mushrooms
  • 1 cup chopped fresh spinach
  • 2 slices Canadian bacon, diced
  • 1 ounce crumbled feta cheese
Instructions:
  • In a blender, puree the oatmeal, cottage cheese, and egg whites until smooth, adding water as necessary for consistency. Blend in the garlic, Italian seasoning, cayenne pepper, salt, and black pepper until well mixed.
  • Heat a saucepan sprayed with cooking spray over medium heat. Cook mushrooms until tender, about 5 to 7 minutes. Set aside.
  • Spritz a large skillet with cooking spray and heat over medium-high heat. Cook the cottage cheese mixture until bubbles form on top. Flip the pancake and brown the other side. Remove from heat and top one half with mushrooms, spinach, Canadian bacon, and feta cheese. Fold over like an omelet.
