Savory Fish Patties with Salsa

Flavorful "burgers" perfect for sandwiches or pitas.
Ingredients:
  • 3 cans (5 to 7 oz each) salmon or tuna, drained, flaked
  • 1 medium onion, finely chopped (1/2 cup)
  • 2 tablespoons lemon juice
  • 1 teaspoon chopped fresh or 1/2 teaspoon dried marjoram leaves
  • 1/2 teaspoon ground mustard
  • 2 slices bread, torn into crumbs (1 1/3 cups)
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil
  • 1 cup salsa
Instructions:
  • Combine all ingredients, excluding the oil and salsa, then form the mixture into 8 patties.
  • In a 10-inch skillet over medium heat, sear patties in oil for about 8 minutes, turning once, until they achieve a golden brown color.
