Savory Oat Pilaf

Renowned chef Lauren Keating reveals her delectable savory oat recipe.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 2 cups reduced-sodium chicken broth
  • 2 cups water
  • 1 cup steel-cut oats
  • 4 carrots
  • 1 cup frozen sweet peas
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon grated lemon peel
  • Dash ground red pepper (cayenne)
  • Salt and pepper
Instructions:
  • Heat oil in a 3-quart saucepan over medium heat. Cook onion and garlic for about 5 minutes until softened.
  • Pour in broth and water, bringing it to a boil. Slowly mix in oats, then grate carrots into the oat mixture using the coarse side of a grater. Lower the heat and simmer for 20 minutes, or until the oats are soft and creamy.
  • Add the peas and cook for 3-4 minutes, stirring occasionally, until the peas are heated through.
  • Take the pilaf off the heat and mix in fresh parsley, lemon zest, and ground red pepper. Season generously with salt and pepper to taste.
