"Veggie-packed oat and cheese burgers with a savory twist, simply mix, chill, shape, and broil for a delicious meal."
Ingredients:
  • 2 teaspoons olive oil
  • 1 small onion, grated
  • 2 cloves crushed garlic
  • 2 carrots, shredded
  • 1 small summer squash, shredded
  • 1 small zucchini, shredded
  • 1.5 cups rolled oats
  • 0.25 cup shredded Cheddar cheese
  • 1 egg, beaten
  • 1 tablespoon soy sauce
Instructions:
  • In a skillet, gently sauté onion and garlic in olive oil until tender. Add carrots, squash, and zucchini, and stir for 2 minutes. Take off heat, mix in oats, cheese, and egg. Stir in soy sauce, transfer to a bowl, and chill for 1 hour.
  • Heat the grill to high temperature.
  • Spread the flour on a large plate. Shape the vegetable mixture into eight 3-inch round patties and gently coat each patty on both sides with the flour.
  • Prepare the grill grate by lightly oiling it. Grill the patties for 5 minutes on each side, or until they are heated through and beautifully browned.
