Delicious, healthy vegetarian muffins perfect for any meal or snack.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.75 cup old-fashioned oats
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.33000001311302 cup reduced-calorie margarine, melted
  • 0.5 cup egg substitute
  • 1 cup nonfat buttermilk
  • 3 meatless breakfast patties, cooked and crumbled
  • 2 teaspoons grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  • Combine flour, oats, baking powder, baking soda, salt, garlic powder, and onion powder in a large bowl. In another bowl, blend melted margarine, egg substitute, and buttermilk. Gently fold wet ingredients into the dry mixture. Mix until just combined, then gently stir in crumbled patties and Parmesan cheese. Spoon batter into muffin cups and bake.
  • Bake in the preheated oven for 8 to 12 minutes, or until the top bounces back when lightly pressed. Then, allow to cool in the muffin tins on a wire rack.
