Cheesy cheddar and savory sauteed onions create a zesty quick bread with an extra layer of cheese on top.
Ingredients:
  • 1.5 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons margarine
  • 0.5 cup shredded sharp Cheddar cheese
  • 0.5 cup finely diced onion
  • 1 tablespoon margarine
  • 0.5 cup milk
Instructions:
  • Preheat your oven to a toasty 400 degrees F (205 degrees C) and generously grease either an 8-inch round or an 8x8-inch square pan.
  • In a bowl, mix together flour, baking powder, and salt. Add 2 tablespoons of diced butter and blend until the mixture is crumbly. Gently fold in 1/2 cup of grated cheese and create a well in the center of the mixture.
  • Sauté the onion in 1 tablespoon of butter until translucent and golden. Remove from the heat and set aside.
  • Beat the egg in a small bowl, then combine with milk and cooked onion. Pour this mixture into the flour well and stir until just moistened to create a soft dough. Pat the dough into the prepared pan and sprinkle 1/2 cup grated cheese over the top.
  • Preheat oven to 400°F (205°C). Bake for 25 minutes until golden brown. Serve while hot. Recipe yields 6 servings.
