Savory Scones With Goat Cheese and Chives

Goat cheese and chive buttermilk scones - a savory delight!
Ingredients:
  • 2 cups all purpose flour
  • 1 teaspoon sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup (1/2 stick) chilled butter, cut into 1/2-inch cubes
  • 1/4 cup to 1/2 cup of freshly chopped chives (can also use chopped green onions)
  • 1 5-ounce log soft fresh goat cheese, crumbled
  • 1 cup buttermilk (plus an extra tablespoon for finish)
Instructions:
  • Preheat your oven to 400°F, then prepare two heavy baking sheets by lining them with either silpat or parchment paper.
  • Prepare the dough by whisking together flour, baking powder, sugar, baking soda, salt, and pepper in a large bowl. Use your fingertips to blend in the butter until a coarse meal forms. Mix in the chives, then add the cheese and buttermilk. Stir with a fork until a sticky dough forms, making sure you can still see bits of cheese in the dough.
  • On a lightly floured surface, gently knead the dough 8 times with floured hands. Shape into a round about 3/4 to 1 inch thick, then cut it into 8 wedges. Avoid over-kneading.
  • Brush the wedges with extra buttermilk using a pastry brush.
  • To Bake: Place the wedges on a large baking sheet without greasing, making sure they are about 1/2 inch apart. Bake at 400°F in the center of the oven until they turn golden brown, approximately 20 minutes. Allow the wedges to cool on a rack. Enjoy these best when freshly baked and warm, served with a touch of butter.
