Cornbread stuffed chicken breasts with plum glaze - a delicious blend of sweet and savory flavors!
Ingredients:
  • 0.33333334326744 cup plum jam
  • 2 (6 ounce) skinless, boneless chicken breast halves
  • Salt and pepper to taste
  • 2 pieces cornbread, crumbled
  • 2 slices cooked bacon, crumbled
  • 2 tablespoons minced celery
  • 2 tablespoons minced onion
  • 2 tablespoons butter, melted
  • 0.25 cup chicken stock
  • 0.33333334326744 cup chicken stock
Instructions:
  • Preheat the oven to 350°F (175°C) to get it nice and hot for baking.
  • In a hot skillet with olive oil, create pockets in the chicken breasts with a paring knife, then sear until golden on each side without fully cooking. Remove from heat.
  • Mix together the cornbread, bacon, celery, onion, butter, and 1/4 cup chicken stock until fully combined. Use the mixture to stuff each breast.
  • Bake in a hot oven for 25 minutes.
  • Simmer 1/3 cup chicken stock, whisk in plum jam, and cook over medium-low heat until most of the stock has evaporated while the chicken bakes.
  • Drizzle the luscious plum glaze over the chicken breasts and bake until the center of the stuffed breast hits 160°F (70°C), about 10 minutes more.
