Elevate baked chicken with a savory filling of spinach, cream cheese, and cheddar.
Ingredients:
  • cooking spray
  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • 0.5 onion, chopped
  • 4 ounces chopped cooked ham
  • 4 ounces fresh spinach
  • 4 ounces cream cheese
  • 4 ounces shredded Swiss cheese
  • 4 large boneless chicken breast fillets
  • 4 ounces Italian-style salad dressing
  • 8 toothpicks, or as needed
  • 0.5 sleeve round buttery crackers, crushed fine
  • 4 ounces shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and generously coat a baking pan with cooking spray.
  • In a skillet over medium heat, sauté oil, garlic, and onion until tender, about 1 to 3 minutes. Add ham and spinach, cook until spinach is wilted, about 1 minute. Turn off heat, mix in cream cheese until melted and slightly cooled. Finally, stir in Swiss cheese and set aside the filling.
  • Thinly slice each chicken breast to a 1/2-inch thickness and transfer to a bowl. Cover the chicken with Italian dressing. Take one chicken breast and pound it to make it thinner. Fill it with about 1/4 of the filling, fold it over to create a packet, secure with toothpicks, and place in the baking pan. Repeat the process with the remaining chicken breasts and filling.
  • Mix crushed crackers and sharp Cheddar in a bowl. Press the cracker mixture onto the chicken breasts, ensuring it adheres well.
  • After baking for 45 minutes in the preheated oven, allow the dish to rest for 10 minutes. Transfer to a serving platter to set the filling, ensuring to remove the toothpicks before serving.
