Quick and flavorful citrus tuna fillets cooked in a skillet in 20 minutes.
Ingredients:
  • 1 pound tuna, halibut or other firm fish fillets, about 3/4 inch thick
  • 1 teaspoon olive or vegetable oil
  • 2 medium green onions, sliced (2 tablespoons)
  • 2 tablespoons lemon juice
Instructions:
  • If fish fillets are large, slice them into 4 serving pieces.
  • In a 10-inch nonstick skillet, heat oil over medium heat. Sauté onions for 2 to 3 minutes, stirring occasionally, until they are crisp-tender.
  • Add the fragrant pesto and fresh lemon juice, then place the fish on top. Bring to a boil and then lower the heat to a gentle simmer. Cover and let it cook for 5 to 10 minutes until the tuna is perfectly pink in the middle.
