Cheesy muffin, ideal for picnics or straight out of the oven.
Ingredients:
  • 225.00 gm self-raising flour
  • 500.00 ml grated tasty cheese
  • 100g mortadella, chopped
  • 1 zucchini, grated
  • 62.50 ml thinly sliced chives
  • 193.13 gm milk
  • 62.50 gm fruit chutney
Instructions:
  • Preheat your oven to 200°C. Grease a Texas muffin pan with 6 3/4-cup capacity, then line the bases of the holes with baking paper.
  • In a large bowl, sift the flour. Add cheese, mortadella, zucchini, and chives. In a separate jug, whisk together milk, egg, and chutney until fully combined. Create a well in the middle of the dry ingredients and pour in the milk mixture. Gently mix with a large metal spoon until just combined. Spoon the mixture into muffin holes.
  • Bake until a skewer inserted in the center comes out clean, about 15 to 20 minutes. Allow to cool in the pan for 3 minutes, then transfer to a wire rack to cool completely. Store in an airtight container at room temperature.
