Cabbage gratin topped with crunchy crackers.
Ingredients:
  • 1 medium head cabbage, cored and sliced thin
  • 1 large onion, chopped
  • 1.5 cups milk
  • 4 eggs, lightly beaten
  • 1 cup crushed saltine crackers
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x12 inch casserole dish.
  • In a large pot over medium heat, melt 1 tablespoon of butter. Saute cabbage and onion for approximately 20 minutes until tender, stirring frequently. Pour in milk and bring to a boil. Simmer on low heat for 5 minutes. Slowly add eggs while stirring continuously. Mix in 3/4 of the cracker crumbs, salt, and pepper thoroughly. Transfer mixture to a casserole dish and sprinkle the remaining cracker crumbs on top. Dot with butter for added flavor.
  • Place in a hot oven for 30 minutes, or until beautifully golden brown and heated throughout.
