Cheesy scalloped potatoes and ham - a comforting dish perfect for holidays.
Ingredients:
  • cooking spray
  • 8 potatoes, peeled and thinly sliced
  • 0.5 cup butter
  • 1 onion, finely chopped
  • 0.5 cup all-purpose flour
  • 2 teaspoons Dijon mustard
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 3 cups milk
  • 3 cups diced ham
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of water to a boil. Add potatoes and cook for 5 to 10 minutes until almost tender. Drain in a colander, rinse with cold water until cool, drain well, and set aside.
  • In a large skillet over medium heat, melt butter. Add onion and cook until tender, about 5 minutes. Stir in flour, Dijon mustard, salt, and pepper, cooking for 1 minute. Slowly pour in milk, stirring constantly until sauce thickens, about 5 minutes. Stir in Cheddar cheese until melted.
  • Create a bed with half of the potatoes in the baking dish. Scatter 1 ½ cups of diced ham over them and pour half of the luscious Cheddar cheese sauce. Repeat with the rest of the potatoes, ham, and sauce for another delightful layer.
  • Bake in the oven until the top is golden brown, approximately 1 hour.
