Scalloped Potatoes and Smoked Ham

Savor a comforting meat and potatoes meal, quick and effortless with minimal prep time.
Ingredients:
  • 2 tablespoons reduced-calorie margarine
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups skim milk
  • 3 medium potatoes, peeled and thinly sliced (3 cups)
  • l cup diced fully cooked smoked extra-lean ham (about 6 ounces)
  • 1 small onion, finely chopped (1/4 cup)
Instructions:
  • 1. Preheat oven to 350°F and generously spray a 1 1/2-quart casserole dish with nonstick cooking spray. 2. In a 1 1/2-quart saucepan, melt margarine over medium heat. 3. Stir in flour, mustard, salt, and pepper, cooking and stirring constantly until margarine is absorbed. 4. Slowly pour in the milk while stirring constantly. 5. Bring the mixture to a boil and continue to stir for 1 minute.
  • In a casserole dish, arrange one layer of potatoes, followed by a layer of ham, onion, and sauce. Repeat the layers. Finish with a final layer of potatoes and sauce on top. Bake covered for 30 minutes, then uncover and bake for an additional 40 minutes or until the potatoes are tender. Allow the dish to rest for 5 to 10 minutes before serving.
