Turn leftover bread into delicious rhubarb bread pudding in no time.
Ingredients:
  • 1 cup white sugar
  • 2 cups diced rhubarb
  • 1 tablespoon ground cinnamon
  • 6 plain rolls or buns
  • 0.5 cup white sugar
  • 0.5 cup butter, melted
Instructions:
  • - Preheat your oven to 350 degrees F (175 degrees C) and grease a 2-quart casserole dish.
  • Combine 1 cup of sugar, fresh rhubarb, and cinnamon in a saucepan over medium-low heat. Bring to a gentle boil, then simmer and stir occasionally until the rhubarb breaks down, approximately 10 minutes. Transfer the flavorful rhubarb mixture into a casserole dish.
  • Cube the rolls and scatter them over the rhubarb. Sprinkle 1/2 cup of sugar over the bread cubes and generously drizzle melted butter over the sugar.
  • Bake until the bread is lightly golden brown and the rhubarb is bubbling, for approximately 35 minutes in the preheated oven.
