Whip up a quick and delicious family meal in just 20 minutes!
Ingredients:
  • 200g packet Egg Noodles
  • 1 bunch broccolini, halved into florets and stems
  • 24 scallops (without roe)
  • 2 tsp sesame oil
  • 48.80 gm oyster sauce, plus extra to drizzle
  • 5.30 gm soy sauce
  • 4.50 gm sugar
  • 1 long red chilli, seeds removed, thinly sliced
  • 1/2 bunch spring onions, thinly sliced on the diagonal
  • 1 bunch coriander, leaves picked
Instructions:
  • Prepare the noodles following the instructions on the packet, then drain and mix in 1 teaspoon of peanut oil.
  • Quickly blanch broccolini in boiling salted water for 1 minute, then cool in cold water.
  • Dry off any excess moisture from the scallops using a paper towel and gently coat them with a touch of sesame oil. Heat up the rest of the peanut oil in a spacious non-stick pan on medium-high heat. Once the oil is hot, carefully add the scallops in groups of 6. Sear them for 1 minute on each side until they develop a golden crust but are still slightly translucent in the middle. Plate them up and serve.
  • Combine oyster sauce, soy sauce, sugar, and 2 tablespoons of water in the frypan, stirring well. Add scallops back to the pan with noodles and broccolini, quickly tossing to heat through. Mix in chili, spring onion, and coriander. Serve immediately, drizzled with extra oyster sauce.
