Indulgent seafood sauce with shrimp and scallops, easy prep for a classy dinner. Enjoy with egg noodles or white rice.
Ingredients:
  • 2 tablespoons butter, divided
  • 1 (8 ounce) package fresh mushrooms, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 pound sea scallops, rinsed and drained
  • 0.5 teaspoon ground black pepper
  • 1 (8 ounce) bottle clam juice
  • 1 cup sour cream
  • 2 tablespoons dry sherry
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large skillet over medium-high heat, melt 1 tablespoon of butter until sizzling. Add the mushrooms and cook until they turn golden brown. Use a slotted spoon to transfer the mushrooms to a plate and set aside.
  • Melt the remaining butter in the skillet, then add in the shrimp and scallops. Cook until the shrimp are pink, about 3 minutes. Remove shrimp and scallops with a slotted spoon and set aside.
  • Combine the flour, black pepper, and clam juice in a medium bowl.
  • - Pour the clam juice mixture into the skillet and bring it to a boil to intensify flavors. Simmer until the mixture thickens. Lower the heat and gently stir in sour cream. Add back the mushrooms, shrimp, and scallops, then mix in the sherry, cooking until heated through. Finish by sprinkling with fresh parsley before serving.
