Delicious almond coffee cake pairs perfectly with coffee.
Ingredients:
  • 1.25 cups white sugar
  • 1 egg
  • 0.5 teaspoon baking powder
  • 1.5 teaspoons almond extract
  • 0.66666668653488 cup heavy cream
  • 1.25 cups all-purpose flour
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a loaf pan by lining it with wax paper and spraying it with cooking spray.
  • In a heavy saucepan over medium heat, melt the butter until foam rises to the top, about 5 to 10 minutes. Remove the foam, then strain the clear golden butter through a fine mesh strainer into a bowl to remove any remaining milk solids, being careful not to pour in any solids from the bottom of the pan. Let the clarified butter cool.
  • Using an electric mixer, beat sugar and egg in a large bowl until light and fluffy. Mix in the baking powder and almond extract, followed by the clarified butter. Gradually add flour and cream in batches, mixing until just combined. Pour batter into prepared pan.
  • Bake in the preheated oven for 50 to 60 minutes until a toothpick comes out clean. Let it cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
