Scandinavian Vegetable Stew

30-minute Veggie Stew: Quick, Delicious Family Dinner
Ingredients:
  • 8 to 10 small red potatoes, cut into fourths (3 cups)
  • 2 cups fresh or frozen baby-cut carrots
  • 3 tablespoons margarine or butter
  • 3 medium green onions, sliced (1/3 cup)
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 cup frozen green peas
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons chopped fresh or 1/2 teaspoon dried dill weed
  • 1 hard-cooked egg, chopped
Instructions:
  • Combine potatoes and carrots in a 3-quart saucepan, making sure they are covered with water. Bring to a boil, then simmer over medium heat with a lid on for 8 to 10 minutes until tender. Drain in a colander and wipe the saucepan with a paper towel.
  • In the same saucepan, melt the margarine over medium heat. Sauté the onions in the melted margarine for 2 minutes, stirring occasionally. Mix in the flour. Slowly pour in the milk while stirring constantly until the mixture thickens and comes to a boil.
  • Add the potatoes, carrots, peas, salt, and pepper into the mixture. Cook for 5 to 6 minutes, stirring occasionally, until the peas are tender.
  • Add dill weed and stir constantly for 2 minutes. Serve topped with chopped egg and more dill weed if desired.
