Delicious family dish with tender veal or chicken options.
Ingredients:
  • 750.00 ml fresh breadcrumbs
  • 125.00 ml parmesan, finely grated
  • 3 tsp garlic powder
  • 2 tsp dried thyme
  • 20.00 ml fresh flat-leaf parsley, finely chopped
  • 125.00 ml plain flour
  • 4 chicken schnitzel (uncrumbed)
  • 4 veal schnitzel, uncrumbed
  • Vegetable oil, for shallow frying
  • Lemon wedges, to serve
Instructions:
  • In a bowl, mix breadcrumbs, parmesan, garlic powder, and thyme. Season with salt and pepper. Transfer half of the mixture to one plate. Add parsley to the remaining mixture, stir well, and spoon onto another plate.
  • In a shallow bowl, whisk eggs. Place flour on a plate. Coat schnitzels in flour, then dip in the egg. Coat chicken in plain breadcrumbs and veal in parsley breadcrumbs. Transfer to a plate, cover, and refrigerate for 30 minutes.
  • - Fill a large deep frying pan with enough oil to come 5mm up the side of the pan. Heat over medium-high heat. - Cook the schnitzel in batches for 5 minutes on each side, or until golden and cooked through. - Drain the schnitzels on a paper towel, cover to keep warm, and serve with lemon wedges.
