Crispy tortilla bowl filled with egg, cheese, avocado, and salsa for a quick and tasty breakfast ready in 20 minutes!
Ingredients:
  • 1 (10 inch) soft flour tortilla
  • 2 eggs
  • 0.5 teaspoon milk
  • 0.5 teaspoon butter
  • 0.25 cup shredded Mexican cheese blend, or more to taste
  • 0.5 avocado - peeled, pitted, and diced
  • 0.25 cup salsa, or to taste
  • 1 pinch paprika, or to taste
  • 1 pinch sea salt
Instructions:
  • Preheat your oven to 400°F (200°C), then mold the tortilla into a tortilla shell mold or oven-proof bowl.
  • In a microwave-safe bowl, combine eggs, milk, butter, and stir in Mexican cheese blend.
  • Bake tortilla in the preheated oven for 5-7 minutes until crispy and brown. Allow to cool for about 2 minutes before transferring from mold to serving dish.
  • Microwave the egg mixture for 30 seconds to 1 minute until set. Remove from the microwave and gently stir with a fork. Microwave for another 30 seconds until fully set.
  • Fill the tortilla bowl with cooked eggs and layer with creamy avocado, zesty salsa, a sprinkle of paprika, and a pinch of salt for a burst of flavor.
