Scrambled eggs, ham, and green onions wrapped in a fluffy flour tortilla for a delicious breakfast treat.
Ingredients:
  • 12 eggs
  • 0.33300000429153 cup milk
  • 3 slices cooked ham, diced
  • 2 green onions, minced
  • salt and pepper to taste
  • 4 ounces Cheddar cheese, shredded
  • 4 (10 inch) flour tortillas
  • 0.5 cup salsa
Instructions:
  • Combine eggs and milk, whisk vigorously. Heat an oiled skillet over medium-high heat, cook the egg mixture until set, stirring occasionally. Add ham, green onions, salt, and pepper just before finishing cooking.
  • Divide the egg mixture evenly among the tortillas. Add a generous sprinkle of cheese on top of the eggs, fold the tortillas over to make rolls, and optionally top with salsa for extra flavor.
