Whip up these tasty breakfast burritos with scrambled eggs, cheese, avocado, and tomato for a delicious morning meal!
Ingredients:
  • 2 (10 inch) flour tortillas
  • 1 tablespoon butter
  • 4 medium eggs
  • 1 cup shredded mild Cheddar cheese
  • 1 Hass avocado - peeled, pitted, and sliced
  • 1 small tomato, chopped
  • 1 small bunch fresh cilantro, chopped, or to taste
  • 1 pinch salt and ground black pepper to taste
  • 1 dash hot sauce, or to taste
Instructions:
  • Lay tortillas on a microwave-safe plate and sprinkle shredded Cheddar cheese down the center of each one. Microwave on high for 20 to 30 seconds until the cheese is melted.
  • Melt butter in a skillet over medium heat. Beat eggs in a bowl and pour into the skillet. Cook and stir until eggs are cooked through, approximately 5 minutes.
  • Arrange the eggs over the melted cheese on the tortillas, then layer with avocado, tomato, and cilantro. Season with salt and pepper, and finish with a drizzle of hot sauce.
