Scrumptious garlic bread

Irresistible garlic tear-and-share bread recipe that's perfect for sharing. Make a batch of 12 for easy preparation and store one tray in the freezer for future baking convenience.
Ingredients:
  • 1 x 7g sachet of dried yeast
  • 500 g strong bread flour plus extra for dusting
  • 50 g white or wholemeal bread
  • 1 big bunch of flat-leaf parsley (60g)
  • 3 cloves of garlic
  • 1 lemon
  • 200 g light cream cheese
  • extra virgin olive oil
Instructions:
  • On the day or ahead, mix 325ml tepid water with yeast in a large bowl for 2 minutes. Add flour and a pinch of sea salt, mix well with a fork. Use your hands to form a dough ball, adding extra flour if needed. Knead on a floured surface for 5 minutes until silky. Shape into a ball, place in an oiled bowl, cover, and let it double in size for 1 hour in a warm place. Blend the bread into crumbs and spread on oiled trays. Blend parsley and garlic, add lemon juice and cream cheese, season well. Divide dough in 2, stretch each to 30cm x 50cm on an oiled surface. Spread half of cream cheese on each, roll up, cut into 18 pieces. Place swirl-side up on tray, cover and refrigerate overnight. Preheat oven to 220°C/425°F/gas 7. Bake for 20 minutes until golden. Drizzle with olive oil before serving.
