Cheesy bacon-wrapped chicken breasts - a delicious family favorite!
Ingredients:
  • 4 large skinless, boneless chicken breasts, pounded thin, or more to taste
  • salt and ground black pepper to taste
  • 1 cup diced ham
  • 1 cup low-fat mayonnaise (such as Smart Balance®)
  • 1 cup low-fat sour cream
  • 0.5 cup shredded Cheddar-Monterey Jack cheese blend
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 8 slices bacon, or more to taste
  • 8 toothpicks, or as needed
  • 0.25 cup whole wheat bread crumbs, or as needed
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), then generously season the chicken with salt and pepper.
  • Combine ham, mayonnaise, sour cream, Cheddar-Monterey Jack cheese blend, mozzarella cheese, Parmesan cheese, onion powder, garlic powder, and smoked paprika in a large bowl. Spread 1/2 cup of the mixture onto each chicken breast. Roll chicken around filling, wrap in 2 slices of bacon, and secure with toothpicks.
  • In a shallow bowl, spread out bread crumbs evenly. Coat each chicken breast generously with bread crumbs. Transfer the breaded chicken breasts into a baking dish.
  • Roast the chicken in the preheated oven for 30-40 minutes until it is no longer pink in the center and the juices run clear. Ensure the internal temperature reaches 165 degrees F (74 degrees C) when tested with an instant-read thermometer.
