Delicious seafood pasta salad with shrimp, crabmeat, red pepper, and mozzarella.
Ingredients:
  • 1 tablespoon butter
  • 1 pound fresh shrimp, peeled and deveined
  • 1 pound crabmeat
  • 1 (8 ounce) package seashell pasta
  • 2 strips celery, sliced
  • 1 red bell pepper, chopped
  • 1 green onion, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 0.25 cup slivered, toasted almonds
  • 1 cup mayonnaise
  • 3 tablespoons fresh lemon juice
  • 0.5 teaspoon Old Bay Seasoning TM
Instructions:
  • Heat butter in a large skillet over medium heat. Cook shrimp until pink. Add crabmeat and heat through for one more minute. Set aside.
  • Bring a large pot of lightly salted water to a boil. Cook pasta until al dente, about 8 to 10 minutes; then drain.
  • Combine the shrimp and crabmeat in a large mixing bowl and allow them to cool to room temperature. Mix in the pasta, celery, bell pepper, and green onion. Gently fold in the mozzarella cheese, toasted almonds, mayonnaise, and lemon juice. Season with parsley and old bay seasoning and toss everything together until well combined.
  • Chill in the refrigerator for 2 hours before enjoying.
