Quick and delicious fish dish perfect for any night!
Ingredients:
  • 125ml (1/2 cup) vegetable oil
  • 1 large red onion, halved, thinly sliced
  • 2 large fresh red chillies, thinly sliced
  • 1 stem lemon grass, pale section only, thinly sliced
  • 4 garlic cloves, thinly sliced
  • 3.5cm-piece fresh ginger, peeled, cut into matchsticks
  • 60ml (1/4 cup) water
  • 21.00 gm soy sauce
  • 10.00 gm caster sugar
  • 10.60 gm fresh lime juice
  • 800g skin-on white fish fillets (such as snapper)
  • Fresh coriander sprigs, to serve
Instructions:
  • In a small saucepan over medium-low heat, sauté the onion in half the oil until soft, stirring frequently for 3-4 minutes.
  • Add the chili, lemongrass, garlic, and ginger. Sauté for 2 minutes until fragrant. Stir in water, soy sauce, sugar, and lime juice. Cook, stirring, for 1 minute until sugar is dissolved. Season with salt and pepper. Keep warm by covering.
  • Dry fish with paper towel. Heat oil in a large frying pan over high heat. Place half the fish, skin-side down. Cook for 2 minutes on each side until golden and cooked through. Transfer to a serving platter. Repeat with remaining fish, reheating pan as needed.
  • To serve, generously spread the chili mixture and fresh coriander over the fish.
