Citrus-seared tuna with crispy noodles, herbs and chilli

Enhance tuna steak with vibrant grapefruit marinade for a burst of flavor.
Ingredients:
  • 1 tablespoon sesame oil
  • 6 tablespoons olive oil plus extra for frying
  • 2-3 fresh red chillies very finely sliced
  • sea salt
  • freshly ground black pepper
  • 1 large bunch fresh coriander
  • 1 small bunch fresh mint
  • 2 good handfuls of glass or cellophane noodles
  • 4 spring onions finely sliced at an angle
  • 2 pink grapefruits
  • 1 tablespoon fish sauce
  • 500 g piece tuna from sustainable sources, ask your fishmonger
Instructions:
  • Juice the grapefruit and combine with fish sauce in a sealed bag. Add tuna, remove air, and marinate for 40 minutes until tuna lightens in color. Transfer grapefruit juice to a bowl, pat dry tuna and set aside. Prepare dressing with sesame oil, olive oil, chilies, and grapefruit juice. Chop herbs, coat tuna, wrap in cling film, and chill. Boil noodles for 1 minute, drain and crisp in pan with olive oil. Divide noodles onto 4 plates. Slice tuna, layer over noodles, top with torn herbs, spring onions, and dressing. Serve immediately.
