Unleash creativity with seared tuna skewers, zesty zucchini salad.
Ingredients:
  • 60ml lemon
  • 1 garlic clove, thinly sliced
  • 125ml olive oil
  • 600g fresh tuna fillet, cut into 3cm cubes
  • 250g vine-ripened cherry tomatoes
  • 5.00 gm caster sugar
  • 4 large zucchini (about 750g), coarsely grated
  • 1 tsp dried chilli flakes
  • 40.00 ml finely chopped mint
  • 40.00 ml pine nuts, toasted
Instructions:
  • Preheat the oven to 200°C. Allow 4 wooden skewers to soak in boiling water for 10 minutes. In a bowl, mix garlic, 2 tablespoons of oil, half of the lemon zest, salt, and pepper. Add the tuna, coat well, cover, and refrigerate to marinate for 15 minutes.
  • Place the tomatoes on a baking tray and generously drizzle them with 1 tablespoon of oil. Roast in the oven for 8-10 minutes until they begin to soften.
  • Heat up a chargrill pan or barbecue on high. Skewer the marinated tuna that has been soaked and cook for 1-2 minutes on each side for a rare tuna or until it reaches your desired level of doneness.
  • Combine sugar, lemon juice, lemon zest, and oil in a bowl. Mix well, then add zucchini, chilli, mint, and pine nuts. Serve with tuna skewers and tomatoes.
