Seared tuna bruschetta

Elevate your dinner with upscale seared tuna bruschetta.
Ingredients:
  • 250g vine-ripened cherry tomatoes
  • 18.20 gm olive oil, plus extra to brush
  • 150g mayonnaise
  • Juice of 1 lemon
  • 4 slices woodfired or sourdough bread
  • 1 garlic clove, halved
  • 4 x 150g tuna steaks
  • 80g tapenade
  • 250.00 ml wild rocket
Instructions:
  • Heat the oven to 180°C.
  • Spread cherry tomatoes on a baking tray, generously season, and drizzle with olive oil. Roast for 6-8 minutes until tender. In a separate bowl, mix mayonnaise and freshly squeezed lemon juice, then let it sit for later use.
  • Preheat a chargrill pan over medium-high heat. Brush bread with oil and cook until charred, about 1-2 minutes per side. Rub bread with cut side of garlic. Brush tuna with oil, season, and chargrill for about 1-2 minutes per side for medium rare.
  • Smear the bread with flavorful tapenade, layer with tuna, zesty lemon mayonnaise, peppery rocket, and accompany with juicy roasted tomatoes.
