Seared tuna salad with avocado and fresh greens - a masterpiece on a plate.
Ingredients:
  • 20.00 ml coriander seeds, crushed
  • 2 garlic cloves, crushed
  • 160ml soy sauce
  • 48.80 gm fish sauce
  • 40.00 ml grated ginger
  • 1/2 bunch coriander, leaves picked, stalks finely chopped
  • 2 long red chillies, seeds removed, finely chopped
  • 600g piece centre-cut tuna, bloodline removed
  • Juice of 1 lime
  • 1 avocado, sliced into wedges
  • 120g mixed salad leaves (mesclun)
  • Sesame oil, to brush
  • 24.00 gm black sesame seeds
  • 24.00 gm white sesame seeds
Instructions:
  • Spread all the sesame seeds in a small, shallow dish. Coat the outer edge of avocado wedges with a touch of oil, then roll them in the sesame seeds. Let them sit on the side.
  • Place mesclun and reserved coriander leaves on a serving plate. Lightly brush a chargrill with oil, preheat to high, and cook tuna for 2 minutes each side until lightly charred but still rare in the center. Let it rest for 5 minutes, then slice into long, thin pieces and add to the salad along with avocado. Finish by drizzling with dressing before serving.
