Seared Tuna with Wasabi-Butter Sauce

This seared tuna recipe has a perfect balance of heat and flavor, with just the right amount of wasabi to enhance the dish without overpowering it. A must-try for any tuna lover!
Ingredients:
  • 2 tablespoons white wine vinegar
  • 10 fluid ounces white wine
  • 0.25 cup minced shallots
  • 1 tablespoon wasabi paste, or to taste
  • 1 tablespoon soy sauce
  • 1 cup unsalted butter, cubed
  • salt and black pepper to taste
  • 1 tablespoon olive oil, or as needed
  • 1 cup chopped cilantro leaves
  • 6 (6 ounce) fresh tuna steaks, 1 inch thick
Instructions:
  • In a small saucepan over medium heat, simmer white wine vinegar, white wine, and shallots until the liquid reduces to about 2 tablespoons. Strain out and discard the shallots, then return the liquid to the pan.
  • Combine wasabi and soy sauce with the reduction in the pan. Gradually whisk in butter one cube at a time over low heat until the mixture is emulsified. Avoid boiling the mixture. Once all the butter is mixed in, add cilantro, remove from heat, and transfer to a small bowl. Set aside.
  • Preheat a large skillet over medium-high heat. Brush tuna steaks with olive oil, season with salt and pepper, and sear in the hot skillet for 3 to 5 minutes on each side, ensuring the center remains slightly pink. Serve with sauce.
