Seattle Caramel Apples

Enhance caramel apples with crunchy trail mix.
Ingredients:
  • 6 Granny Smith apples
  • 6 wooden sticks
  • 1 (14 ounce) package individually wrapped caramels, unwrapped
  • 2 tablespoons water
  • 0.5 teaspoon vanilla extract
  • 3 cups trail mix
  • 1 cup semisweet chocolate chips
Instructions:
  • Skewer apples three-fourths of the way into the stem end with wooden sticks. Arrange them on a baking sheet lined with lightly greased aluminum foil.
  • In a saucepan over low heat, melt the caramels with water until smooth. Add vanilla. Dip apples into the caramel, swirling them to remove excess coating. Use the saucepan's edge to scrape off any extra caramel from the bottom of the apples.
  • Spread the trail mix on a dinner plate, coat the apples with the mixture, then chill on aluminum foil.
  • Place the chocolate chips in a microwave-safe bowl and microwave in 30-second intervals, stirring each time, until smooth. Drizzle the melted chocolate over the apples and chill in the refrigerator until serving.
