Indulgent pancakes made with sour cream, butter, and self-rising flour for ultimate melt-in-your-mouth perfection.
Ingredients:
  • 2 cups Gold Medal™ self-rising flour
  • 1 tablespoon sugar
  • 1/4 teaspoon baking soda
  • 2 cups milk
  • 1/4 cup butter or margarine, melted
  • 1 container (8 oz) sour cream
  • 2 eggs, beaten
  • 1 cup whipping cream
  • 5 cups sweetened fresh or frozen fruit (such as raspberries, blueberries, strawberries, blackberries and/or sliced peeled peaches)
Instructions:
  • Preheat griddle to 350°F. Test readiness by sprinkling a few drops of water - when bubbles jump around, it's ready.
  • Combine flour, 1 tablespoon sugar, and baking soda in a large bowl. In a separate medium bowl, whisk together milk, butter, sour cream, and eggs until combined. Pour the wet ingredients into the dry mixture and stir until smooth. The batter should be thin.
  • Lightly oil the griddle and pour 1/4 cup of batter for each pancake. Cook until bubbly on top and dry around edges, then flip and cook until golden brown on both sides.
  • In a medium bowl, whisk whipping cream and 1 tablespoon sugar until stiff peaks form. Serve by spooning fruit onto half of each pancake, folding over, and topping with extra fruit and whipped cream.
