Vibrant sticky rice dumplings for a festive Chinese New Year tradition!
Ingredients:
  • 50g sesame seeds
  • 50g palm sugar
  • 62.50 ml unsalted roasted peanuts
  • 16.80 gm coconut oil, softened (use can use butter as an alternative)
  • 200g rice flour
  • 252.50 gm coconut milk
  • Splash of rose pink food colouring
  • Splash of green food colouring
  • 1000.00 gm water
  • 112.50 gm white sugar
  • 50g ginger
Instructions:
  • Toast sesame seeds in a hot pan until fragrant and light golden. Grind toasted seeds in a mortar and pestle or small blender. Mix in the rest of the ingredients until a thick paste forms. Set aside.
  • Mix the flour and coconut milk together until well combined. Knead the dough with your hands until it comes together smoothly. The dough should be slightly wet, soft, and pliable. Test the consistency by pressing a tablespoon of dough into a flat disc - it should hold together without cracking. Adjust by adding water if too dry or more flour if too wet.
  • Split the dough into three equal portions in separate bowls. Stir a small amount of rose pink food coloring into one portion and knead until the color is evenly distributed. Repeat with green food coloring for another portion, leaving one portion uncolored.
  • For the dumplings, scoop a tablespoon of dough mix, flatten it in your palm, add a teaspoon of filling, seal it tightly, and shape it into a smooth ball. Repeat for the rest of the dough and filling.
  • Bring a large saucepan of water to a boil over high heat.
  • Create a sweet ginger soup by combining 4 cups of water, sugar, and ginger in a medium saucepan. Bring to a boil, then simmer for 10-15 minutes until ready to serve.
  • When the water is rapidly boiling, gently drop in the balls. Let them cook for approximately 5 minutes until they float to the surface, then wait an additional minute before using a slotted spoon to carefully remove them. Remember, they'll be hot!
  • Place 2 dumplings in each small bowl and pour about 1/2 cup of soup per serving. Serve piping hot. Sprinkle with sesame seeds for extra flavor, if desired.
